White Button Mushroom Kit (Agaricus Bisporus)

Agaricus bisporus, known as table mushroom, cultivated mushroom or button mushroom, is an edible basidiomycete fungus which naturally occurs is grasslands, fields and meadows across Europe and North America, though has spread much more widely and is one of the most widely cultivated mushrooms in the world. The original wild form bore a brownish cap and dark brown gills but more familiar is the current variant with a white form with white cap, stalk, flesh, and brown gills.

 

Some grocery stores in the western world sell this mushroom in canned and fresh preparations. An agaric, its gills are often left on in preparations. It can be found cooked on pizzas and casseroles, as stuffed mushrooms, raw on salads, and in various forms in a variety of dishes.

 

Agaricus bisporus is known by many names several of which refer to different stages; 'button mushroom' when sold, collected or eaten young, unopened form, 'Crimini mushroom' or ;baby bella' an immature Portobello, or 'Portobello mushroom' as a large brown mature mushroom. It is known as the 'Champignon de Paris' in France. It is also often called simply 'Champignon' (the French word for 'fungus') in several languages.

 

The cultivated mushroom is a member of the large genus Agaricus, which has numerous members which are edible, tasty and collected worldwide.

 

 

PESTO MUSHROOM & BACON FOCACCIA

Preparation: 5 Minutes

Cooking: 15 Minutes

Serves: 4

 

INGREDIENTS

• 4 rashers thin bacon (rind removed)

• 400g flat mushrooms

• 2 round focaccia, split

• 1/3 cup basil pesto

• 25g mozzarella, thinly sliced

• Small basil leaves

• Salt & Ground black pepper

 

METHOD

1. Preheat grill to medium. Thread the bacon 8 small wooden skewers in

a concertina fashion. Place onto grill tray. Grill for 3 minutes on each

side or until light golden brown. Remove bacon from skewers.

2. Place mushrooms onto grill tray and cook for 3 minutes either side until

tender. Slice.

3. Spread focaccia with pesto. Top with half the mozzarella. Top with

bacon, mushrooms and remaining mozzarella.

4. Place in a baking tray under grill and cook for 4-5 minutes or until

cheese is melted and bread is warm. Top with basil leaves and season

with salt and pepper and serve

 

 

GRILLED GARLIC MUSHROOMS WITH HOMMUS

Preparation: 10 minutes

Cooking: 5 minutes

Serves: 4

 

INGREDIENTS

• 1/3 cup Olive Oil

• 2 cloves garlic, crushed

• 8 medium flat mushrooms, stalks trimmed

• 100g baby spinach

• 200g carton hommus dip

• 1tbs diced chives

 

METHOD

1. Preheat grill on high heat. Combine oil, garlic, salt and pepper in a

small bowl.

2. Place mushrooms stem side down on a grill tray. Brush with garlic oil to

coat and grill for 2 minutes. Turn mushrooms and brush with garlic oil.

Grill for a further 2-3 minutes.

3. Place mushrooms on a bed of baby spinach. Spoon a dollop of

hommus on each mushroom. Sprinkle with chives and season with

pepper.
